Ingredients

1 lb chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

1 cup vegetable oil (for frying)

1/2 cup honey

2 tbsp hot sauce (such as Sriracha or your favorite)

Fresh herbs (like thyme or parsley) for garnish

Instructions

Marinate the Chicken: In a medium bowl, pour the buttermilk over the chicken tenders. Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare the Coating: In a large bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix until well combined.

Heat the Oil: In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check this by dropping a small amount of batter into the oil; it should sizzle.

Coat the Chicken: Remove chicken from buttermilk, allowing excess to drip off. Dredge each tender in the flour mixture until fully coated, then shake off the excess.

Fry the Chicken: Carefully place the chicken tenders in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove chicken from oil and place on paper towels to drain excess oil.

Make the Hot Honey Glaze: In a small saucepan, combine honey and hot sauce over low heat. Stir until well mixed and warm. Adjust the amount of hot sauce based on your heat preference.

Serve: Drizzle the hot honey glaze over the crispy chicken tenders. Garnish with fresh herbs if desired. Serve immediately with your favorite dipping sauces like ranch or blue cheese.
