1 cup long-grain white rice

1/2 cup sliced almonds

1 cinnamon stick

4 cups water (divided)

1 cup brewed coffee (cooled)

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

Instructions
 

Rinse the Rice: Start by rinsing the rice under cold water until the water runs clear to remove excess starch.

    Soak the Mixture: In a large bowl, combine the rinsed rice, sliced almonds, cinnamon stick, and 2 cups of water. Let it soak for at least 4 hours or overnight in the refrigerator.

      Blend the Ingredients: After soaking, transfer the rice mixture (including the water) to a blender. Add the remaining 2 cups of water and blend on high until the mixture is smooth and creamy, about 1-2 minutes.

        Strain the Mixture: Using a fine mesh strainer or cheesecloth, strain the mixture into a pitcher, separating the liquid from the solid bits. Press down to get as much liquid out as possible.

          Add Coffee and Sweetener: To the strained liquid, stir in the brewed coffee, sweetened condensed milk, and vanilla extract until well combined.

            Chill: Refrigerate the horchata for at least 1 hour to allow it to chill and the flavors to meld.

              Serve: Once chilled, serve the horchata de café over ice, and sprinkle a pinch of ground cinnamon on top for garnish. Sweeten further to taste if desired.
