HONEY ROASTED CARROTS

Ingredients
  

1 lb (450g) baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon ground cinnamon

½ teaspoon ground ginger

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the honey, olive oil, ground cinnamon, ground ginger, salt, and pepper. Whisk together until well-blended.

      Add the baby carrots to the bowl and toss them in the honey mixture until they are evenly coated.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper for easier cleanup.

          Roast the carrots in the preheated oven for about 25-30 minutes, turning them halfway through, until they are tender and caramelized, checking for doneness after 20 minutes.

            Once done, remove from the oven and let them cool for a couple of minutes.

              If desired, garnish with fresh thyme sprigs before serving to add a pop of color and flavor.
