4 salmon fillets

1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon lime juice

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

In a small bowl, whisk together honey, soy sauce, grated ginger, minced garlic, and lime juice to create a marinade.

    Place the salmon fillets in a shallow dish and pour half of the marinade over them. Allow them to marinate for about 20 minutes.

      Preheat your grill or oven to 400°F (200°C). If using a grill, make sure to oil the grill grates beforehand to prevent sticking.

        While the salmon is marinating, toss the diced pineapple with olive oil, salt, and pepper. This will be grilled or roasted alongside the salmon for added flavor.

          Remove the salmon from the marinade and reserve the remaining marinade. Place the salmon fillets on the grill (or a baking sheet if using the oven).

            Grill the salmon for about 4-5 minutes on each side, brushing occasionally with the reserved marinade, until cooked through and flaky. If using the oven, bake for 12-15 minutes or until the internal temperature reaches 145°F (63°C).

              During the last few minutes of cooking, add the pineapple to the grill or oven and grill/roast until lightly charred and caramelized.

                Once cooked, remove the salmon and pineapple from the grill/oven, and let them rest for a few minutes.

                  Serve the salmon topped with charred pineapple and a drizzle of the reserved marinade, garnished with fresh cilantro or parsley and lime wedges on the side.
