2 cups elbow macaroni

2 tablespoons olive oil

1 pound chicken breast, diced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/4 cup honey

1/2 teaspoon crushed red pepper flakes (adjust for spice level)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup green onions, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season with salt, black pepper, garlic powder, and smoked paprika. Cook until the chicken is browned and cooked through, about 7-8 minutes.

      Prepare the Honey Sauce: Once the chicken is done, reduce the heat to low. Add honey and crushed red pepper flakes to the skillet. Stir to coat the chicken evenly, cooking for an additional 2-3 minutes to let the sauce thicken slightly. Remove from heat and set aside.

        Make the Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring continuously. Gradually whisk in the milk, continuing to stir until the mixture thickens, about 5-7 minutes.

          Mix in the Cheese: When the sauce is thickened, reduce the heat to low and stir in the shredded cheddar cheese and grated Parmesan cheese until melted and smooth.

            Combine Everything: In a large bowl, combine the cooked macaroni, honey pepper chicken, and the cheese sauce. Stir until the pasta and chicken are evenly coated.

              Bake (Optional): For an added layer of flavor, preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish, top with extra shredded cheese, and bake for 15-20 minutes until bubbly and golden on top.
