1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.

      Place the baby carrots in a large mixing bowl. Pour the honey mustard mixture over the carrots and toss until they are evenly coated.

        Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for about 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

            Remove from the oven and let cool for a couple of minutes.

              Transfer the glazed carrots to a serving dish, and if desired, sprinkle fresh thyme leaves on top for an added herbal note.
