Ingredients

1.5 lbs pork tenderloin

1/3 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon rice vinegar

1 teaspoon ground ginger

1/2 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

Chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Marinade: In a medium mixing bowl, whisk together the honey, soy sauce, minced garlic, Dijon mustard, rice vinegar, ground ginger, and black pepper until well combined.

Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or overnight for maximum flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C).

Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork tenderloin from the marinade (reserve the marinade for later) and season with salt. Sear the pork for 2-3 minutes on each side until browned.

Bake the Pork: Pour the reserved marinade over the seared pork tenderloin. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Rest the Pork: Remove the skillet from the oven, cover with foil, and let the pork rest for 5-10 minutes. This allows the juices to redistribute.

Slice and Serve: Slice the pork tenderloin into medallions, garnish with chopped green onions and sesame seeds, and drizzle with extra sauce if desired. Serve with steamed rice and vegetables for a complete meal.
