Ingredients

1.5 lbs (700g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon vegetable oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, minced garlic, ginger, rice vinegar, vegetable oil, and red pepper flakes if using. Season the chicken thighs with salt and pepper, then pour the marinade over them. Ensure they are well-coated, cover the bowl with plastic wrap, and let marinate in the refrigerator for at least 30 minutes, or preferably 2 hours for deeper flavor.

Prepare to Cook: When ready to cook, take the marinated chicken out of the refrigerator and let it sit at room temperature for about 10 minutes. This helps it cook more evenly.

Cook the Chicken: Heat a large skillet or frying pan over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later), and add the chicken to the hot skillet. Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (74°C).

Make the Sauce: Once the chicken is cooked, remove it from the pan and set aside on a plate. In the same skillet, pour in the reserved marinade and bring it to a simmer. Let it cook for about 3-5 minutes until the sauce thickens slightly.

Glaze the Chicken: Return the chicken to the skillet and toss it in the thickened sauce, allowing it to coat each piece evenly. Cook for an additional 1-2 minutes to let the flavors meld.

Serve: Remove from heat and transfer the glazed chicken to a serving platter. Garnish with sliced green onions and sesame seeds for a delicious finish.
