4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce (low-sodium preferred)

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

2 tablespoons sesame oil

1 tablespoon cornstarch

2 tablespoons water

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, and apple cider vinegar until well combined. This will be your marinade.

    Place the chicken thighs in a resealable plastic bag or a shallow dish, and pour the marinade over the top. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, preferably 2 hours for more flavor.

      After marinating, remove the chicken from the marinade, reserving the marinade for later. Pat the chicken dry with paper towels and season with salt and pepper.

        In a large skillet, heat sesame oil over medium-high heat. Add the chicken thighs and sear for 5-6 minutes on each side, or until they are golden brown and cooked through.

          While the chicken cooks, pour the reserved marinade into a small saucepan. In a small bowl, mix cornstarch with water until smooth, then add this mixture to the saucepan.

            Bring the marinade to a boil, stirring constantly. Once it thickens (about 3-4 minutes), remove it from heat.

              Once the chicken is done cooking, drizzle some of the thickened sauce over the chicken in the skillet, tossing it to coat evenly.

                Serve the chicken hot, drizzled with additional sauce and garnished with sliced green onions and sesame seeds.
