4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)

Salt and pepper, to taste

2 tablespoons sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Cooked rice (for serving)

Instructions
 

Prepare the Marinade: In a bowl, combine honey, soy sauce, minced garlic, ginger, sesame oil, and rice vinegar. Mix well.

    Marinate the Chicken: Place the chicken thighs in a zip-lock bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes, or ideally for 2-4 hours for maximum flavor.

      Cook the Chicken: Preheat a large skillet or frying pan over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Season the chicken lightly with salt and pepper.

        Sear the Chicken: Add the chicken thighs to the hot skillet and sear for about 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the pan and set aside.

          Make the Sauce: In the same skillet, add the reserved marinade and bring it to a simmer. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for an additional 2-3 minutes until slightly thickened.

            Coat the Chicken: Return the chicken to the skillet, coating it in the honey garlic sauce for about 1-2 minutes.

              Serve: Slice the chicken and serve it over cooked rice, drizzling with any remaining sauce. Garnish with sesame seeds and sliced green onions.
