1.5 lbs pork tenderloin

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

Optional: Fresh rosemary or thyme sprigs for garnish

Marinate the Pork: In a large bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, rosemary, thyme, salt, pepper, and Dijon mustard until well combined. Add the pork tenderloin to the bowl, ensuring it is fully coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: Heat a large, oven-safe skillet over medium-high heat. Once hot, add the marinated pork tenderloin (reserve the marinade for later use) and sear for about 3-4 minutes on each side, until nicely browned.

        Bake in the Oven: Pour the reserved marinade over the pork tenderloin and transfer the skillet to the preheated oven. Bake for approximately 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C).

          Rest and Slice: Once cooked, remove the pork from the oven and cover it loosely with aluminum foil. Let it rest for about 5-10 minutes. This helps the juices redistribute, making the meat tender and juicy.

            Serve: After resting, slice the pork tenderloin into medallions and drizzle some of the glaze from the skillet over the top. Garnish with fresh rosemary or thyme sprigs if desired. Serve with your choice of sides, such as roasted vegetables or mashed potatoes.
