1 cup jasmine rice (uncooked)

2 cups water

10 oz shrimp, peeled and deveined

2 tablespoons vegetable oil

2 eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then cover and reduce to a simmer. Cook for about 15 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes, then fluff with a fork. For best results, use day-old rice.

    Prepare the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 3-4 minutes, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Scramble the Eggs: In the same skillet, add the beaten eggs. Scramble them until just set, then remove and set aside with the shrimp.

        Sauté Aromatics and Veggies: Add the remaining tablespoon of vegetable oil to the skillet. Sauté the minced garlic for about 30 seconds until fragrant. Add the mixed vegetables and cook for another 3-4 minutes until they are tender.

          Combine Everything: Return the shrimp and scrambled eggs to the skillet with the vegetables. Pour in the soy sauce and oyster sauce (if using). Mix everything together, ensuring the rice and sauces are evenly distributed.
