4 medium potatoes, peeled and diced

1 lb (450g) smoked sausage, chopped

1 cup celery, diced

1 cup carrots, diced

1 medium onion, chopped

4 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives for garnish

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the chopped smoked sausage and cook until browned on all sides, about 5 minutes. Remove the sausage and set aside.

    Sauté Vegetables: In the same pot, add the chopped onion, celery, and carrots. Sauté until the vegetables start to soften, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add Potatoes and Broth: Stir in the diced potatoes, chicken broth, dried thyme, and smoked paprika. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes or until the potatoes are tender.

        Blend for Creaminess (optional): For a creamier texture, you can use an immersion blender to blend a portion of the chowder directly in the pot, or transfer 2 cups to a blender, blend until smooth, and return it to the pot.

          Add Cream and Sausage: Stir in the heavy cream and the cooked sausage. Allow the chowder to simmer for an additional 5 minutes to heat through. Season with salt and pepper to taste.

            Garnish and Serve: Remove the chowder from heat. Ladle it into bowls and garnish with freshly chopped chives for a touch of freshness.
