1 pound ground beef

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

4 sub rolls

1 cup shredded mozzarella cheese

Olive oil for brushing

Optional: extra parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Make the Meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, oregano, salt, and black pepper. Mix until well combined.

      Form the Meatballs: Shape the mixture into meatballs, about 1 to 1.5 inches in diameter. You should yield around 16 meatballs.

        Brown the Meatballs: In a large skillet over medium heat, heat a drizzle of olive oil. Add the meatballs and brown them on all sides for about 5-7 minutes. (You can do this in batches if needed.)

          Add Marinara Sauce: Once browned, pour in the marinara sauce over the meatballs. Reduce heat to low and let them simmer in the sauce for about 15-20 minutes until cooked through.

            Prepare Sub Rolls: While the meatballs simmer, slice the sub rolls open, but not completely through, allowing them to hold their shape. Brush the outside with olive oil.

              Assemble the Subs: Once the meatballs are cooked, take a meatball and place it in each sub roll, spooning some sauce over the top.

                Add Cheese: Sprinkle shredded mozzarella cheese over the meatballs in each roll.

                  Bake the Subs: Place the assembled subs on a baking sheet and bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly and the bread is slightly golden.

                    Garnish and Serve: Once out of the oven, garnish with extra parsley if desired. Serve hot.
