Ingredients

For the Cake:

1 ¾ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 large eggs

1 cup buttermilk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Coconut-Pecan Topping:

1 cup sweetened shredded coconut

1 cup chopped pecans

1 cup evaporated milk

¾ cup granulated sugar

1/3 cup unsalted butter

1 teaspoon vanilla extract

2 large egg yolks

For the Chocolate Ganache:

1 cup semi-sweet chocolate chips

½ cup heavy cream

Instructions

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.

      - In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until combined.

          - Carefully stir in the boiling water until the batter is smooth (the batter will be thin).

            - Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

              - Allow the cake to cool for 10 minutes in the pan, then remove it from the pan and let it cool completely on a wire rack.

                Make the Coconut-Pecan Topping:

                  - In a saucepan over medium heat, combine the evaporated milk, sugar, butter, and egg yolks. Cook, stirring constantly, until the mixture thickens (about 10 minutes).

                    - Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans. Set aside to cool.

                      Poke the Cake:

                        - Once the cake is completely cool, use the end of a wooden spoon to poke holes all over the top of the cake, about 1 inch apart.

                          Make the Chocolate Ganache:

                            - In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate chips. Let sit for 2-3 minutes and then stir until smooth.

                              Assemble the Cake:

                                - Pour the chocolate ganache over the top of the cake, making sure it seeps into the holes.

                                  - Once the ganache has set slightly, spread the coconut-pecan topping evenly over the cake.

                                    Serve:

                                      - Cut into squares and serve chilled or at room temperature. Enjoy your homemade German chocolate poke cake!
