1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1/3 cup maple syrup

2 large eggs

1 cup corn kernels (fresh, frozen, or canned)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish or a cast-iron skillet with butter or cooking spray.

    In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and cinnamon if using.

      In another bowl, combine the milk, melted butter, maple syrup, and eggs. Mix well until fully combined.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

          Fold in the corn kernels gently to incorporate.

            Pour the batter into the prepared baking dish or skillet, spreading it evenly.

              Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
