Ingredients

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

2 cups frozen mixed vegetables (carrots, peas, green beans)

1 cup uncooked macaroni or elbow pasta

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheese (cheddar or your choice)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, brown the ground beef until it's no longer pink. Drain any excess fat.

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

Stir in the diced tomatoes, kidney beans, corn, frozen mixed vegetables, uncooked macaroni, beef broth, Worcestershire sauce, paprika, Italian seasoning, salt, and pepper. Mix everything well.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes.

Transfer the mixture to a greased 9x13 inch casserole dish.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Carefully remove the foil and sprinkle the shredded cheese over the top. Return to the oven to bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

Once done, let it cool for 5 minutes before serving. Garnish with fresh parsley if desired.
