1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 can (15 oz) green beans, drained

1 cup uncooked elbow macaroni

2 cups beef broth

1 tsp paprika

1 tsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes. Add in the ground beef, cooking until browned. Drain excess fat.

      Combine Ingredients: Stir in the diced tomatoes (with juice), corn, green beans, uncooked macaroni, beef broth, paprika, Italian seasoning, salt, and pepper. Mix well to combine all the ingredients.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Cover with aluminum foil.

          Bake: Bake in the preheated oven for 30-35 minutes or until the macaroni is tender, stirring halfway through.

            Add Cheese: Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return to the oven. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

              Garnish: Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley if desired, and serve warm.
