Hobo Casserole Ground Beef Recipe Easy

Ingredients
  

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup deep-fried potato sticks or tater tots

1 cup shredded cheddar cheese

2 cups cooked rice (white or brown)

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Add Aromatics: Stir in the diced onion and minced garlic; cook until the onion is translucent, about 3-4 minutes.

        Mix in Vegetables: Add the diced tomatoes, kidney beans, corn, and cooked rice to the skillet. Sprinkle in the chili powder, cumin, salt, and pepper. Stir everything together and let it simmer for about 5 minutes, allowing the flavors to meld.

          Layer the Casserole: Transfer half of the beef mixture into a greased 9x13 inch casserole dish. Spread half of the potato sticks or tater tots on top. Then, add the remaining beef mixture and finish with the remaining potato sticks or tater tots.

            Top with Cheese: Sprinkle shredded cheddar cheese on top of the casserole.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let sit for a few minutes. Garnish with fresh parsley, if desired. Serve warm and enjoy your hearty dish!
