1 lb ground turkey or chicken

1 medium onion, diced

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups low-sodium chicken broth

2 cups fresh spinach, chopped

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

8 oz whole wheat lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil for garnish

Sauté the Meat: In a large pot or Dutch oven over medium heat, add the ground turkey or chicken. Cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Add the diced onion and minced garlic to the pot with the meat. Sauté for an additional 3-4 minutes until the onion becomes translucent and fragrant.

      Combine Tomatoes and Broth: Stir in the crushed tomatoes and chicken broth. Mix well to combine.

        Season the Soup: Add the chopped spinach, dried oregano, dried basil, red pepper flakes (if using), and season with salt and pepper to taste. Bring the mixture to a gentle simmer.

          Cook the Noodles: Once the soup is simmering, add the broken lasagna noodles and cook according to package instructions, usually about 8-10 minutes, until the noodles are tender.

            Make it Creamy: In a separate bowl, mix the ricotta cheese, half of the mozzarella, and half of the Parmesan cheese together. Once the noodles are cooked, stir this cheese mixture into the soup until melted and creamy.

              Serve: Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil leaves for an extra burst of flavor.
