In a large skillet, heat the olive oil over medium-high heat until shimmering.
Add the steak bites to the hot skillet in a single layer, cooking for about 2-3 minutes without stirring, until browned. Flip the steak pieces and cook for another 2-3 minutes for medium-rare. Adjust the cooking time based on your preferred doneness.
Reduce the heat to medium-low, push the steak bites to one side of the skillet, and add the butter and minced garlic to the empty side.
Allow the butter to melt, swirling the pan to mix it with the garlic. Once fragrant (about 30 seconds), stir the garlic butter and rosemary and thyme into the steak bites. Cook for an additional minute, making sure the steak is well coated.
