Ingredients

12 oz. whole grain penne pasta

1 lb. lean ground beef (90% lean)

1 medium onion, diced

3 cloves garlic, minced

1 cup low-sodium beef broth

1 cup heavy cream or Greek yogurt for a healthier twist

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Start by boiling a large pot of salted water. Add the whole grain penne pasta and cook according to package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until softened.

Add the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, Italian seasoning, and crushed red pepper flakes if using.

Make the Sauce: Pour in the low-sodium beef broth, scraping the bottom of the skillet to deglaze any flavorful bits. Bring to a simmer and let it cook for 3-4 minutes. Reduce heat to low, then stir in the heavy cream (or Greek yogurt for a lighter option) and Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.

Combine: Add the cooked pasta to the skillet, tossing to coat in the creamy beef sauce. Ensure everything is well combined and heated through. Adjust seasoning with additional salt and pepper if necessary.

Serve: Plate the creamy beef pasta, garnishing with chopped fresh parsley and additional Parmesan if desired.
