Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, basil, parsley, salt, and pepper. Mix well until all ingredients are incorporated.
Using your hands, form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Drizzle olive oil over the meatballs for added flavor and moisture, then bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
While the meatballs are baking, prepare the fresh vegetables. In a large bowl, toss the baby spinach and halved cherry tomatoes together.
To serve, place a scoop of the spinach and tomato mixture in bowls. Top with several baked chicken meatballs, sliced avocado, and a dollop of Greek yogurt.
Drizzle lemon juice over the bowls for a zesty finish and enjoy!
