1 ham bone (with some meat still attached)

6 cups low-sodium chicken broth

3 large potatoes, peeled and diced

2 cups green cabbage, chopped

1 large onion, diced

3 cloves garlic, minced

2 carrots, sliced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

In a large stockpot, heat the olive oil over medium heat.

    Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the sliced carrots and cook for another 3 minutes.

        Pour in the chicken broth and add the ham bone to the pot.

          Bring the mixture to a boil, then reduce the heat to a simmer.

            Add the diced potatoes, chopped cabbage, dried thyme, smoked paprika, bay leaf, and season with salt and pepper.

              Simmer uncovered for about 1 hour, or until the potatoes are tender and the ham is falling off the bone.

                Remove the ham bone from the pot. Shred any meat from the bone and return the meat to the soup; discard the bone and bay leaf.

                  Taste and adjust seasoning, adding more salt or pepper if needed.

                    Ladle the soup into bowls and garnish with freshly chopped parsley before serving.
