Once your mixture of seasoned beef, beans, tomatoes, and rice is thoroughly combined and cooked, it’s time to transfer it to a casserole dish. Select a dish that holds at least 3-4 quarts to ensure your casserole has enough space to expand while baking. Use a spatula to carefully scoop the mixture from your pot into the casserole dish, ensuring an even distribution. This step is crucial for consistent cooking; uneven layers can lead to some parts being overcooked while others remain undercooked.

Ingredients

1 pound ground beef

1 cup uncooked white rice

1 medium onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, rinsed and drained

1 cup beef broth

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.

Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.

Combine Ingredients: Stir in the diced tomatoes (with juice), kidney beans, uncooked rice, beef broth, chili powder, cumin, salt, and pepper. Mix well to combine.

Simmer: Bring the mixture to a gentle boil. Reduce heat to low and cover. Let it simmer for about 15 minutes, stirring occasionally, until the rice is tender and most of the liquid is absorbed.

Blend in Cheesy Goodness: Remove from heat and fold in the shredded cheddar cheese and sour cream until thoroughly mixed.

Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

Top It Off: Sprinkle any remaining cheddar cheese on top for an extra cheesy crust.

Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with chopped parsley. Serve hot and enjoy!
