Ingredients
  

1 lb lean flank steak, thinly sliced against the grain

3 cups broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/4 cup low-sodium soy sauce

2 tablespoons cornstarch

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1/2 teaspoon ginger, grated

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Cooked brown rice or quinoa (for serving)

Instructions
 

Prep the Steak: Pat the flank steak dry and season with salt and pepper. In a bowl, toss with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Allow to marinate for 15 minutes.

    Blanch the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for 2 minutes. Remove and plunge into ice water to stop cooking. Drain and set aside.

      Make the Sauce: In a small bowl, whisk together the remaining soy sauce, honey or maple syrup, rice vinegar, ginger, remaining cornstarch, and red pepper flakes. Set aside.

        Cook the Beef: In a large skillet or wok, heat the olive oil over medium-high heat. Add the marinated beef slices in a single layer (you may need to do this in batches). Cook for 2-3 minutes on each side until browned and cooked through. Remove the beef from the skillet and set aside.

          Sauté Garlic and Broccoli: In the same skillet, add a bit more oil if needed. Sauté the minced garlic for about 30 seconds until fragrant. Add in the blanched broccoli and toss to combine.

            Combine & Serve: Return the beef to the skillet. Pour the sauce over the mixture, stirring constantly until the sauce thickens (about 2-3 minutes). Remove from heat.

              Garnish: Serve over brown rice or quinoa, and sprinkle with chopped green onions. Enjoy your healthy stovetop beef and broccoli!
