1 cup Medjool dates, pitted

1 cup natural peanut butter (unsweetened)

1/2 cup unsweetened cocoa powder

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup almond milk (or any non-dairy milk)

1/2 teaspoon vanilla extract

Sea salt, for topping

Chopped roasted peanuts, for garnish

Prepare the Date Base: In a food processor, combine the pitted dates and 1/4 cup of the peanut butter. Blend until smooth and sticky. If needed, add a teaspoon of water to help it blend more easily.

    Form the Base: Transfer the date mixture to a lined square baking dish (about 8x8 inches). Press it down firmly to create an even layer. Place in the freezer to set for about 20 minutes.

      Make the Caramel Layer: In a small bowl, mix together the remaining 3/4 cup of peanut butter with the almond milk and vanilla extract until smooth. Spread this mixture evenly over the date layer in the baking dish. Return to the freezer for an additional 20 minutes to set.

        Prepare the Chocolate Topping: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each interval until completely smooth.

          Combine Layers: Once the caramel layer is set, pour the melted chocolate over the top, spreading it evenly. Sprinkle with a pinch of sea salt and chopped roasted peanuts for added crunch and flavor.

            Final Freezing: Place the assembled dessert back in the freezer for at least another 30 minutes until the chocolate layer is firm.

              Cut and Serve: Once fully set, remove from the baking dish and cut into bars or squares.
