Healthy Chocolate Mini Muffins

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup coconut sugar (or light brown sugar)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsweetened applesauce

2 large eggs

1/2 cup almond milk (or any milk of choice)

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin or line it with mini muffin liners.

    In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt until well combined.

      In another bowl, mix together the applesauce, eggs, almond milk, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix to keep the muffins fluffy.

          If desired, fold in the dark chocolate chips and chopped walnuts for added texture and flavor.

            Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.

              Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Remove from the oven and allow to cool in the tin for 5 minutes before transferring the muffins to a wire rack to cool completely.
