4 medium-sized russet potatoes

4 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons smoked paprika

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

¼ cup grated Parmesan cheese (optional)

¼ cup sour cream (for serving, optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly, then pat them dry with a towel.

      Slice the potatoes diagonally, making cuts about ⅛ inch apart, but not cutting all the way through. A wooden spoon placed on each side of the potato can help prevent you from slicing too deep.

        In a small bowl, mix olive oil, garlic powder, smoked paprika, sea salt, pepper, rosemary, and thyme until well combined.

          Brush the herb-infused oil mixture generously over the potatoes, ensuring some gets between the slices. Use a spoon to help drizzle the mixture into the cuts.

            Place the prepared potatoes in a baking dish and cover them with aluminum foil for the first half of baking to retain moisture.

              Bake in the preheated oven for 30 minutes, then carefully remove the foil and bake for an additional 15-20 minutes, or until the potatoes are golden and crispy on the outside.

                If using, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of baking.

                  Once done, let the potatoes cool for a few minutes, then serve with a dollop of sour cream if desired.
