2 slices of your favorite bread (sourdough or brioche works great)

2 large eggs

2 slices of ham (preferably honey or smoked)

1 slice of cheddar cheese (or any cheese of your choice)

1 tablespoon butter

Salt and pepper to taste

Optional: Fresh greens (like arugula or spinach)

Optional: Hot sauce or ketchup for serving

Instructions
 

Toast the Bread: Begin by lightly toasting the slices of bread in a skillet over medium heat until golden brown on both sides. Remove and set aside.

    Cook the Ham: In the same skillet, add the slices of ham and cook for about 2-3 minutes on each side until heated through and slightly crispy. Remove and keep warm.

      Fry the Eggs: In the same skillet, add the butter. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper. Cook for about 2-3 minutes for sunny-side-up eggs, or until the whites are set. For over-easy, gently flip the eggs and cook for an additional minute.

        Assemble the Sandwich: On one slice of toasted bread, layer the ham, followed by the egg. Place the slice of cheese on top of the egg and cover with the second slice of toasted bread.

          Melt the Cheese (Optional): If you prefer your cheese melted, return the sandwich to the skillet and press down lightly. Cook for an additional minute on low heat until the cheese starts to melt.

            Serve: Slice the sandwich in half if desired. Serve warm with greens on the side and condiments like hot sauce or ketchup, if using.
