1 sheet of puff pastry, thawed

1 cup cooked ham, diced

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 tablespoon Dijon mustard

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

1 egg, beaten (for egg wash)

Salt and pepper to taste

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the diced ham, shredded cheddar cheese, cream cheese, Dijon mustard, and thyme. Season with salt and pepper to taste. Mix until all ingredients are well combined.

      Roll out the thawed puff pastry sheet on a lightly floured surface to smooth out any creases. Cut the pastry into squares, about 4 inches by 4 inches each. You should get around 9 to 12 squares.

        Place a generous tablespoon of the ham and cheese mixture in the center of each square.

          Fold the pastry diagonally to create a triangle and press the edges together to seal tightly. To ensure a good seal, you can crimp the edges with a fork.

            Brush the tops of the filled pastries with the beaten egg to give them a golden sheen when baked.

              Place the pastries on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until they are puffed and golden brown.

                Once done, remove from the oven and let cool for a few minutes before serving.
