Ingredients
  

4 chicken thighs (bone-in, skin-on)

1 cup Guinness stout (preferably a stout beer for richness)

2 tbsp olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 cup chicken broth

2 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

Fresh parsley, for garnish

Preparation of Chicken: Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.

    Searing the Chicken: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown. Flip and cook for an additional 5 minutes. Remove the chicken from the pan and set aside.

      Sautéing Vegetables: In the same pan, add the chopped onions, garlic, carrots, and celery, cooking for about 3-4 minutes until they begin to soften.

        Building the Base: Add the tomato paste, stirring well to coat the vegetables, and cook for another minute. Then pour in the Guinness stout, scraping the bottom of the pan to deglaze and mix all the flavors.

          Combining Ingredients: Add the chicken broth, thyme, and rosemary, mixing everything thoroughly. Bring the mixture to a simmer.

            Cooking the Chicken: Return the seared chicken thighs back to the skillet, skin-side up. Cover the pan and reduce heat to low. Let it simmer for 30-35 minutes or until the chicken is cooked through and tender.

              Final Touches: Taste the sauce and adjust seasoning with more salt and pepper if needed.

                Serving: Serve the Guinness chicken hot, spooning the rich sauce and vegetables over the top. Garnish with fresh parsley for a splash of color.
