Ingredients
  

1 lb ground turkey

1 tablespoon olive oil

1 bell pepper, sliced (red, yellow, or green)

1 cup snap peas

1 small carrot, julienned

2 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 teaspoons water (slurry for thickening)

Sesame seeds, for garnish

Green onions, sliced for garnish

Cooked rice or quinoa, for serving

Instructions
 

Prepare the Sauce: In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

    Cook the Turkey: In a large pan or wok, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Add Aromatics: Push the turkey to one side of the pan, and add minced garlic and grated ginger to the empty space. Sauté for about 30 seconds until fragrant.

        Vegetable Additions: Stir in the sliced bell pepper, snap peas, and julienned carrot. Sauté for an additional 5-7 minutes until the vegetables are tender-crisp.

          Combine and Thicken: Pour the prepared teriyaki sauce over the turkey and veggies, stirring to combine. Bring the mixture to a simmer and add the cornstarch slurry while stirring continuously. Cook for another 1-2 minutes until the sauce thickens.

            Serve: Remove from heat and serve the stir fry over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions.
