1 lb ground beef (80/20 blend for juiciness)

2 cloves garlic, minced

1 small onion, finely chopped

1 tsp ground cumin

1 tsp dried oregano

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 cup fresh parsley, chopped

1 tbsp olive oil

4 pita breads

1 cup Greek yogurt

1 tbsp lemon juice

1 cucumber, finely diced

1 tomato, diced

1/2 red onion, thinly sliced

Optional: Feta cheese and black olives for topping

Prepare the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

    Cook the Beef: Add the ground beef to the skillet, breaking it up with a spatula. Sprinkle in the cumin, oregano, smoked paprika, salt, and black pepper. Cook until the beef is browned and fully cooked through, about 8-10 minutes. Stir in the fresh parsley and remove from heat.

      Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, lemon juice, and the diced cucumber. Mix well and season with salt and pepper to taste.

        Warm the Pita: While the beef is cooking, you can warm the pita breads in a separate skillet or in the oven at 350°F for about 5 minutes until soft and pliable.

          Assemble the Gyros: Place a generous amount of the beef mixture in the center of each warmed pita. Top with diced tomatoes, sliced red onions, and a generous dollop of tzatziki sauce. Add feta cheese and black olives if desired.
