Grilled Shrimp Tacos

Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

Juice of 1 lime

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large bowl, combine the olive oil, smoked paprika, garlic powder, cumin, cayenne pepper, lime juice, salt, and pepper. Mix well to create a marinade.

    Add the shrimp to the marinade and toss to ensure they are evenly coated. Let the shrimp marinate for about 15-20 minutes.

      Preheat your grill to medium-high heat.

        Once the grill is ready, skewer the shrimp (about 4-5 shrimp per skewer) to make grilling easier.

          Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and are slightly charred. Remove from the grill and set aside.

            While the shrimp is grilling, warm the corn tortillas on the grill for about 30 seconds on each side until they are soft and pliable.

              To assemble the tacos, place a generous handful of shredded cabbage on each tortilla. Top with 3-4 grilled shrimp, a few avocado slices, and a sprinkle of fresh cilantro.

                Serve the tacos with lime wedges on the side for squeezing over the top.
