1 zucchini, cut into 1-inch slices

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Creamy Dill Yogurt Sauce:

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 garlic clove, minced

1 tablespoon lemon juice

Salt and black pepper to taste

Marinate the Salmon: In a mixing bowl, combine the olive oil, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Add the salmon cubes and gently toss to coat. Cover and refrigerate for 15-30 minutes to let the flavors meld.

    Prepare the Vegetables: While the salmon marinates, chop the red bell pepper and zucchini. Set aside.
