8 slices of rye bread

8 oz corned beef, thinly sliced

8 oz Swiss cheese, sliced

1 cup sauerkraut, drained

1/2 cup Russian or Thousand Island dressing

4 tablespoons unsalted butter, softened

Fresh dill or parsley for garnish (optional)

Instructions
 

Prepare the Bread: Spread a thin layer of butter on one side of each slice of rye bread.

    Assemble the Sandwich: On the unbuttered side of four slices, layer the ingredients in the following order: a couple of slices of Swiss cheese, a generous portion of corned beef, a handful of sauerkraut, and a dollop of Russian or Thousand Island dressing. Top with another slice of Swiss cheese before placing the unbuttered side of the remaining bread on top.

      Heat the Grill: Preheat a grill or a large skillet over medium heat.

        Grill the Sandwiches: Place the assembled sandwiches buttered side down on the grill. Cook for about 4-5 minutes, or until the bread is golden brown and crispy. Carefully flip and grill the other side for an additional 4-5 minutes until the cheese is melted and the bread is golden brown.

          Serve: Remove from the grill, slice in half diagonally, and garnish with fresh dill or parsley as desired. Serve warm with extra dressing on the side for dipping.
