Ingredients

1.5 lbs flank steak

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and black pepper to taste

2 ripe tomatoes, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

3 tablespoons fresh cilantro, chopped

Juice of 1 lime

Instructions

Marinate the Steak: In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper. Rub the mixture evenly over both sides of the flank steak and let it marinate for at least 30 minutes to 2 hours in the fridge for deeper flavor.

Prepare the Tomato Pepper Salsa: In another bowl, combine the diced tomatoes, red and yellow bell peppers, chopped red onion, minced jalapeño, cilantro, and lime juice. Stir gently to combine and season with salt and pepper to taste. Let this sit for the flavors to meld while you grill the steak.

Prepare the Grill: Preheat your grill to high heat (around 450°F/232°C). Make sure the grates are clean and oiled to prevent sticking.

Grill the Steak: Place the marinated flank steak directly on the hot grill. Grill for about 5-7 minutes on each side for medium-rare, depending on the thickness of the steak. Use a meat thermometer; the internal temperature should read 130-135°F (54-57°C).

Rest the Steak: Once grilled to your desired doneness, remove the flank steak from the grill and let it rest on a cutting board for 5-10 minutes. This helps to retain the juices.

Slice and Serve: After resting, slice the steak against the grain into thin strips. Serve the slices on a platter topped generously with the fresh tomato pepper salsa.
