4 slices of sourdough bread

2 cups aged cheddar cheese, shredded

1 cup fresh mozzarella cheese, sliced

2 tablespoons unsalted butter, softened

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Make the Spicy Tomato Jam: In a small saucepan, combine the halved cherry tomatoes, olive oil, apple cider vinegar, brown sugar, red pepper flakes, salt, and pepper.

    Cook the Jam: Cook over medium heat, stirring occasionally, until the tomatoes soften and release their juices, about 10-15 minutes. The mixture should thicken slightly. Remove from heat and let it cool.

      Prepare the Sandwich: Preheat a skillet over medium heat. Spread softened butter on one side of each slice of sourdough bread.

        Build the Sandwich: On the unbuttered side of two slices of bread, layer half of the cheddar cheese, followed by the mozzarella, and then the remaining cheddar. Spoon a generous amount of spicy tomato jam over the cheese. Top with the remaining bread slices, buttered side out.
