4 slices of sourdough bread

8 ounces Gouda cheese, sliced

1 cup cremini mushrooms, sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon butter (for grilling)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the sliced mushrooms and onions. Drizzle with olive oil, sprinkle garlic powder, and season with salt and pepper. Toss until evenly coated.

      Spread the mushroom and onion mixture on a baking sheet in a single layer. Roast in the oven for 20 minutes, stirring halfway through, until the mushrooms are golden and caramelized.

        While the mushrooms and onions are roasting, butter one side of each slice of sourdough bread.

          Heat a skillet over medium heat. Place two slices of bread, buttered side down, in the skillet.

            Layer half of the Gouda cheese on top of each slice of bread in the skillet. Once the mushrooms and onions are finished roasting, divide them evenly between the two sandwiches, then top with the remaining Gouda cheese.

              Top with the remaining slices of buttered bread, buttered side up.

                Grill for about 4-5 minutes per side, or until the bread is golden brown and the cheese is melted. If needed, cover the skillet with a lid to help the cheese melt thoroughly.

                  Once grilled, remove from the skillet and let sit for a minute before slicing.

                    Garnish with chopped fresh parsley and serve immediately.
