Ingredients

4 slices of whole grain bread

4 large eggs

4 slices of cheddar cheese

1 avocado, sliced

4 slices of crispy bacon (or turkey bacon for a lighter option)

1 tablespoon butter

Salt and pepper to taste

Optional: Hot sauce or salsa for serving

Instructions

Preheat the griddle: Heat the griddle over medium heat and spread butter evenly across the cooking surface.

Cook the bacon: Place the bacon strips on the griddle. Cook until crispy, about 4-6 minutes. Turn occasionally for even cooking. Once done, remove and set aside on a paper towel to drain excess grease.

Fry the eggs: In the same griddle, crack the eggs, maintaining some distance between them. Season with salt and pepper. Cook for about 2-3 minutes until the whites are set but the yolks are still runny. You can cover them with a lid for faster cooking.

Assemble the sandwich: Lay two slices of bread on the griddle. On each slice, place a piece of cheddar cheese, followed by the fried egg, crispy bacon, and avocado slices. Top with another slice of bread.

Griddle the sandwich: Gently press down with a spatula to flatten slightly. Grill each side for about 3-4 minutes until the bread is golden brown and the cheese melts.

Serve: Remove from the griddle and slice the sandwiches in half. Serve with optional hot sauce or salsa on the side for added flavor.
