Ingredients

1 pound fresh green beans, trimmed

2 cups ripe tomatoes, chopped (or 1 can of diced tomatoes)

1 medium onion, finely diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup fresh basil leaves, chopped (for garnish)

Grated Parmesan cheese (optional for serving)

Instructions

Prepare the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until they are vibrant green and tender-crisp. Drain and immediately transfer to a bowl of ice water to halt the cooking process. Drain again and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Create the Sauce: Stir in the chopped tomatoes (or canned diced tomatoes), dried oregano, and sugar. Season with salt and pepper. Bring the mixture to a gentle simmer, cooking for 10-12 minutes until the tomatoes soften into a sauce, stirring occasionally.

Combine Green Beans and Sauce: Add the blanched green beans to the skillet, tossing them in the tomato sauce. Cook for an additional 5 minutes until the beans are heated through and coated nicely with the sauce.

Serve: Remove from heat and adjust seasoning if necessary. Garnish with chopped fresh basil and sprinkle with grated Parmesan cheese if desired.

            Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

              - Presentation Tips: Serve the green beans in a shallow bowl drizzled with extra virgin olive oil and a sprig of fresh basil on top for a pop of color. Enjoy this dish warm as a side or even as a light vegetarian main!
