4 medium green apples, peeled and diced

1 cup water

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon (optional)

1/2 teaspoon salt

Instructions
 

Start by preparing your green apples: peel and dice them into small chunks. This will help them cook down evenly.

    In a large saucepan, combine the diced apples and water. Bring this mixture to a boil over medium-high heat, stirring occasionally.

      Once boiling, reduce the heat to low and let it simmer, uncovered, for about 15-20 minutes, or until the apples are soft.

        Remove the saucepan from the heat and use a potato masher or fork to mash the apples into a chunky puree.

          Strain the mixture through a fine mesh sieve or cheesecloth into a clean mixing bowl to extract the apple juice. Use a spatula to press down and get as much liquid out as possible. You'll need about 2 cups of juice.

            Pour the extracted apple juice back into the saucepan and add in the sugar, lemon juice, vanilla extract, ground cinnamon, and salt. Stir well to combine.

              Bring the mixture to a boil again over medium heat, stirring constantly until the sugar is fully dissolved.

                Lower the heat and let it simmer for about 30-40 minutes, stirring occasionally, until the syrup thickens to your desired consistency (it should coat the back of a spoon).

                  Once ready, remove from heat and allow to cool slightly before transferring to sterilized bottles or jars. Store in the refrigerator for up to 3 weeks.
