1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cucumber, diced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar (or lemon juice for a lighter flavor)

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa and a pinch of salt, then reduce heat to a simmer. Cover and cook for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    While the quinoa is cooling, prepare the vegetables. In a large mixing bowl, combine the diced cucumber, bell pepper, cherry tomatoes, red onion, and Kalamata olives.

      Once the quinoa has cooled, add it to the bowl with the chopped vegetables. Gently fold in the crumbled feta cheese and chopped parsley.

        In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), dried oregano, salt, and pepper. Adjust seasoning to taste.

          Pour the dressing over the quinoa salad and toss everything together gently until well combined.

            Allow the salad to sit for at least 15 minutes at room temperature to let the flavors meld together before serving.
