4 slices of sourdough bread

6 ounces Gouda cheese, shredded

1 cup mixed mushrooms (shiitake, cremini), sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon garlic powder

Salt and pepper to taste

Fresh thyme leaves (optional, for garnish)

Prepare the Mushrooms and Onions: In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the sliced onions and sauté for about 4-5 minutes until they become soft and translucent.

    Add Mushrooms: Stir in the sliced mushrooms along with garlic powder, salt, and pepper. Cook for another 8-10 minutes, stirring occasionally, until the mushrooms are golden brown and caramelized. Remove from heat and set aside.

      Prepare the Grilled Cheese: Lay out the slices of sourdough bread. On two slices, layer half of the shredded Gouda cheese. Top with the sautéed mushroom and onion mixture, and then add the remaining cheese on top. Place the other slices of bread on top to form sandwiches.

        Grill the Sandwiches: In a clean skillet over medium-low heat, add the butter and remaining tablespoon of olive oil. Once melted and bubbling, add the sandwiches. Grill each side for about 3-4 minutes until golden brown and the cheese is melted.
