4 high-quality beef hot dogs

4 gourmet hot dog buns (preferably brioche)

1 cup cherry tomatoes, halved

4 crispy bacon strips, crumbled

1 cup arugula or baby spinach

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and pepper to taste

Optional: pickled jalapeños for a spicy kick

Prepare the Bacon: Preheat your oven to 400°F (200°C). Place bacon strips on a baking sheet lined with parchment paper and bake for 15-20 minutes or until crispy. Once done, remove and crumble into small pieces.

    Make the Sauce: In a small bowl, mix the mayonnaise, Dijon mustard, and lemon juice together. Add salt and pepper to taste. Set aside.

      Grill the Hot Dogs: Preheat a grill or grill pan on medium heat. Grill the hot dogs for about 5-7 minutes, or until you see nice grill marks and the hot dogs are heated through.

        Toast the Buns: While the hot dogs are grilling, lightly toast the hot dog buns on the grill for about 1 minute, until golden brown.

          Assemble the Hot Dogs: Start by spreading a generous amount of the sauce inside each toasted bun. Place a grilled hot dog into each bun.

            Top with Ingredients: Add a handful of arugula or baby spinach on top of the hot dog, followed by the halved cherry tomatoes and crumbled bacon. If you like a little heat, add some pickled jalapeños on top.
