2 large onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

4 slices of sourdough bread

1 cup Gruyère cheese, shredded

1 cup sharp cheddar cheese, shredded

1 tablespoon Dijon mustard

Salt and pepper to taste

Instructions
 

In a large skillet, heat the butter and olive oil over medium heat until melted.

    Add the sliced onions and sugar to the skillet, stirring well to coat the onions evenly.

      Cook the onions for about 25-30 minutes, stirring occasionally, until they are caramelized and golden brown. Season with salt and pepper to taste.

        While the onions cook, preheat a separate non-stick skillet or griddle over medium heat.

          Spread Dijon mustard on one side of each slice of sourdough bread.

            On the non-mustard side of two slices, layer a generous amount of the caramelized onions followed by a mix of Gruyère and cheddar cheese.

              Top with the remaining slices of bread, mustard side down, creating two sandwiches.

                Place the sandwiches in the preheated skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.

                  Remove from the skillet, slice in half, and serve while hot.
