20 Golden Oreo cookies

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, hulled and diced

1/2 cup strawberry jam

Preheat the oven: Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.

    Make the crust: In a food processor, pulse the Golden Oreos into fine crumbs. Combine the crumbs with the melted butter until well mixed. Press this mixture into the bottom of the prepared baking pan evenly. Bake for 10 minutes and then let it cool while preparing the cheesecake filling.

      Prepare the cheesecake mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy. Gradually add the granulated sugar and beat until smooth. Mix in the vanilla extract.

        Add the eggs: Add one egg at a time, mixing on low speed until just combined after each addition. Do not overmix as this can incorporate too much air into the cheesecake.

          Incorporate strawberries: Gently fold in the diced strawberries until evenly distributed throughout the cheesecake mixture.

            Spread the mixture: Pour the cheesecake mixture over the cooled Oreo crust, smoothing the top with a spatula.

              Add the strawberry jam: Drop spoonfuls of the strawberry jam over the cheesecake layer and use a knife to swirl it gently into the mixture for a beautiful marbled effect.

                Bake: Bake the cheesecake bars in the preheated oven for 35-40 minutes or until the edges are set, and the center has a slight jiggle.

                  Cool: Remove from the oven and let the bars cool at room temperature for about 30 minutes. Then, refrigerate for at least 3 hours, preferably overnight, to set completely.

                    Serve: Once chilled and set, lift the cheesecake out of the pan using the parchment paper overhang and cut into squares.
