4 (6 oz) cod fillets

1/4 cup soy sauce (low-sodium recommended)

2 tablespoons fresh ginger, grated

2 tablespoons honey or maple syrup

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked jasmine rice or quinoa (for serving)

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, grated ginger, honey (or maple syrup), minced garlic, sesame oil, and rice vinegar. If you want a thicker glaze, mix the cornstarch with a tablespoon of water and add to the marinade; stir until combined.

    Marinate the Cod: Place the cod fillets in a shallow dish or zip-top bag. Pour half of the marinade over the cod, ensuring each fillet is well-coated. Reserve the other half of the marinade for later use. Let the cod marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

        Bake the Cod: Remove the cod from the marinade and place the fillets on the prepared baking sheet. Bake in the preheated oven for about 12-15 minutes, or until the cod flakes easily with a fork.

          Heat the Glaze: While the cod is baking, take the reserved marinade and cook it in a small saucepan over medium heat. Bring it to a simmer and let it cook for about 3-5 minutes until slightly thickened (especially if you used cornstarch). Remove from heat.
