Ingredients

1 cup fresh cherries, pitted and halved

1 tablespoon freshly grated ginger

2 tablespoons honey or agave syrup (adjust for sweetness)

1 cup sparkling water or soda

1 tablespoon lemon juice

Ice cubes

Fresh mint leaves for garnish

Lemon slices for garnish

Instructions

In a blender, combine the pitted cherries, grated ginger, honey (or agave syrup), and lemon juice. Blend until smooth to create a cherry-ginger puree.

Strain the puree through a fine mesh sieve into a bowl or pitcher to remove the pulp; this will give you a smooth liquid base for your mocktail.

Fill your serving glasses with ice cubes, then pour about 1/4 of the cherry-ginger puree into each glass.

Top each glass with sparkling water or soda, stirring gently to combine the flavors without losing the fizz.

Garnish each mocktail with fresh mint leaves and a lemon slice on the rim of the glass for an extra pop of color and aroma.
